Tacos with Chipotle Sweet Potato Mash

taco with chipotle sweet potato mashMashed sweet potatoes are a great way to add heft to vegetarian tacos. In this dish, the chipotle gives the sweet potatoes a spicy, smoky kick. Serve the sweet potato mash family style along with corn tortillas, salsa, black beans and avocados so diners can assemble their own tacos. Garnish with extra cilantro and lime wedges and serve sangria or Mexican be­­­­­­­­­­er.

 

Chipotle Sweet Potato Mash

  • Sweet potatoes (we used 4 small sweet potatoes for 2 people)
  • Chipotle chiles in adobo sauce
  • Butter (optional)

Preheat oven to 450°F. Wash sweet potatoes and prick skin several times with a fork or knife. Bake until sweet potatoes are soft, about 1 – 1 ½ hours. For easier cleanup, line baking sheet or dish with aluminum foil. When the sweet potatoes are cool enough to handle, slice them open lengthwise and scoop out the flesh. Place the flesh in a bowl and mash with a fork until smooth. Chop 1 chipotle chili in adobo sauce and mix into sweet potato mash. Taste and add more chipotle chiles if you like. You could also add a spoonful of butter to make the mash creamier, though it is not necessary.

Salsa

Combine in a large bowl and mix thoroughly:

  • 4-5 medium-large tomatoes, seeded and diced
  • ¼ medium onion, diced
  • 2 cloves garlic, minced
  • 1 jalapeno, minced
  • 2 limes, juiced
  • 1 handful cilantro leaves, chopped

Taste and adjust ingredients to suit your taste.

Black Beans with Avocado and Lime

Combine in a large bowl and mix thoroughly:

  • 1 14.5 oz. can of black beans, drained and rinsed
  • 1 avocado, diced
  • Juice from 1 lime

The lime juice slow down the oxidation of the avocado, keeping it from turning brown, but it’s best to make this dish just before serving.

    Though Andrea and I have discovered some really cool Taco places in SF, like Tacolicious, these Taco’s were by far the best i ever had…seriously!
