Earlier this week Sweet Paul posted a recipe for Cantaloupe and Yogurt Parfaits. With a cantaloupe lying on the counter and sunny skies shining bright, I couldn’t resist the allure of this summertime treat. To make the parfaits, simply puree cantaloupe, lemon juice and a teaspoon of sugar and top with a mixture of yogurt, honey and fresh vanilla bean.
The cantaloupe did not puree well in the blender, though, so I had to transfer it to the food processor to get a smooth puree. I also added a little triple sec to the pureed cantaloupe because it tasted a little watery. To be honest, I was disappointed in the pureed cantaloupe. Next time I’ll try using a different fruit such as peaches or mango.
The yogurt, however, was delicious. Scraping vanilla bean seed into the yogurt added a natural vanilla flavor quite unlike and so much better than pre-flavored vanilla yogurt. The honey added a delicious touch of sweetness as well.
Overall, the dessert was fine. The cantaloupe puree needs improvement, but the yogurt was delicious and is a great starting point for future yogurt parfaits. I’ll report back with my next batch of yogurt parfaits and let you know how they turn out!

Oooh, that sounds like a great idea! Sorry the cantaloupe turned out watery. I think all melons probably would do that. =( It looks soo yummy though!
Yes, the yogurt part was really good! I think you’re right about all melons being watery…it’s just their nature. Better luck next time.
