Lemon Potato Edamame Salad

If you’ve never visited Green Kitchen Stories, do so. Stunning photos of delicious, healthy food make it hard to resist running into the kitchen and whipping up one of their dishes. Though I only discovered this blog a few months ago, we’ve enjoyed several of their recipes. The No-Rice Risotto with Chard and the Flour-Free Banana & Blueberry Pancakes have become staples in our house, and as of Wednesday, this Lemon, Potato & Edamame Salad became one of our new favorites.

For the version pictured above, I used yellow fingerlings, red potatoes and purple potatoes. I also added some Dijon mustard to the dressing to help emulsify the lemon juice and olive oil. This recipe is incredibly simple, utterly delicious and beautiful.
